Abstract
About a hundred pieces of Tynpanotonus fuscatus var. radulawevG bought from three different sale locations in Keffi, Masaka, and Orange markets. Three hundred from each market and about a total of nine hundred pieces of periwinkles were sampled. Standard analytical methods showed that raw periwinkles had a crude protein content ranging from 39.23- 61.69%, crude ash content ranging from 3.00 - 3.96%, crude lipid values from 0.39-0.52%, Carbohydrate values of 18.20-41.13% and crude fiber values ranging from 0.25-0.71%. The boiled samples had Crude protein values ranging from 28.00-48.00%, crude ash from 1.70- 2.49%, crude fibre values of 0.00-0.31%, crude lipid values ranging from 0.12 - 0.76% and carbohydrate values ranging from 28.05-38.87%.. Atomic absorption spectrophotometry revealed a Calcium, Potassium, Manganese, Magnesium, Zinc and Iron content ranging from 45.23-55.49mg/1 OOg, 19.10-45.16mg/1 OOg, 0.14-0.68mg/100g, 141.62-188.84mg/100g, 0.14- 0.84mg/100g, 8.35-17.62mg/l OOg respectively in the raw samples. In the boiled samples the Calcium, Potassium, Manganese, Magnesium, Zinc and Iron values ranged from 37.01- 43.00mg/l OOg, 21.18-42.50mg/l OOg, 0.20-0.65mg/l OOg, 135.12-170.42mg/l OOg, 0.11- 0.5mg/100g, 5.14-15.00mg/100grespectively.The mineral content of the periwinkle samples did not exceed the set standard safe for human consumption. Heavy metal values were within the tolerant levels in seafood as recommended by FAO, 1983 and EC, 2001. The amino acids were detected using amino acid analyzer. The total bacteria count (TBC), total coliform count (TCC), total Salmonella/Shigella count (TSSC) and total fungal count (TFC) varied from 1.18
- 3.20 x 10 8 cfu/g, 1.20 - 2.80 x 106 cfu/g, 1.00 - 1.85 x 106 cfu/g and 1.72 - 3.00 x 10s cfu/g for raw samples. TBC, TCC, TSSC and TFC for the boiled samples had values ranging from 0
- 1.57 x 10 ° cfu/ml, 0.00 - 1.56 x l6 cfu/g, 0.00 - 0.77 x 10 6 cfu/g and 0.00 - 0.44 x 10s cfu/g for the boiled samples respectively.Molecular identification of the most frequently occurring bacteria revealed that they showed similarity to Bacillus substilis strain TPS4 (96.60%), Pseudomonas asiastica strain CWCS NVNS (97.82%) and Escherichia coli strain ENOSE 10R (98.00%). The most frequently occurring fungi revealed similarity toMeyerozyma gulliemondi strain JY41 (99.82%), Fusarium oxyspomm E-225 1 (99.38%)and Aspergillus terreus isolate A2S40 (96.77%).
